This apprenticeship follows the nationally recognised ST0230 Hospitality Supervisor standard (Food & Beverage specialism), giving you a genuine Level 3 qualification while you earn and gain hands-on experience in a busy, independent hospitality business.
Key Responsibilities:
- Supervising front-of-house service during shifts, ensuring every guest receives an authentic, memorable Thai dining experience
- Leading and motivating team members during shifts, leading by example on standards and professionalism
- Coordinating table service, bookings, and special events including cooking classes and private dining
- Briefing the team on menu items, specials, and dietary requirements so they can confidently guide customers
- Assisting with staff training and development
- Resolving customer queries and complaints calmly and professionally
- Supporting stock control, ordering, and operational planning, minimising waste and helping manage costs within budget
- Ensuring compliance with food hygiene and health and safety requirements
- Helping implement marketing and promotional activity, working alongside our social media and events team
- Learning to use booking and operational systems, including our staff SOP app
Your training
Training will take place online with our fantastic assessors at Oaklands College.
Where it leads
After your apprenticeship, you may be offered a permanent position withing the company.
A clear route into a supervisory or management role, with the possibility of progressing into our upcoming second site in Welwyn Garden City.

You will be mentored by executive head chef and owner, Thippawan Rashleigh. Thippi grew up in a small village northeastern of Thailand, Chaiyaphum with food as her love language. Now based in St Albans, she brings the soul of her hometown to every dish — using Thai herbs and spices, seasonal produce, and locally sourced ingredients to create flavours that are both deeply authentic and beautifully of-the-moment. Thippi is passionate about sustainability: cook what you have at home, in the right portions, and create no waste.
Her three passions — people, food, and yoga — shape everything she does. Whether she's cooking for first-time visitors or old friends, running a class, or writing her debut cookbook, Thippi's mission is always the same: connection through food.
