- Learn how to portion, cut, slice, dip, batter, maintain holding temperature, frying, and sauté
- Select cuts of meat, poultry, shellfish, fish, game, or vegetables to be used for frying or sautéing
- Plate menu items along with appropriate garnish
- Learn a wide variety of cooking techniques and methods
Your training
- You will complete the Commis Chef Level 2 apprenticeship with HIT Training
- Your apprenticeship includes regular one‑to‑one sessions with a dedicated trainer/coach, workplace learning, and online study
Where it leads
We offer a lot of opportunities for progression within the back of house department. Once completed the apprenticeship, candidates will have regular reviews and development plans aimed at getting them ready for the next step. Usually they will see a promotion to Demi-Chef de Partie within 6 months and to Chef de Partie within a year.
